A lot of otherwise excellent cooks don't. The reason? Too weak. The basic rules for coffee mak ingthat la, the rules that apply to every type of coffee-maker are simple. Here they are from the Pan-American Coffee Bu reau: 1. Keep your coffee-maker sparkling clean, and scald It be fore using. 2. Start with fresh, cold wa ter. 3. Allow one standard coffee measure tor its equivalent, two level measuring tahlespoonfuisl of fresh coffee to each three-quarters of a measuring cup of fresh ly drawn water. For demi-tasse service, use one and a half as much coffee to the same amount of water. 4. Never boll coffee. 5. Be sure your coffee Is the proper grind for your coffee-maker. 6. Place over heat, and, while It Is reaching the boiling point, Inseit the filler in the upper bowl. Then measure out the correct quantity of finely ground coffee. When the water bolls, lower the heat and Insert the upper bowl. Aft er most of the water has risen Into the upper bowl, stir the wa ter and conce briskly. After two' or three minutes, re move the coffee-maker from the the coffee basket. Then measure the exact amount of boiling wa- er to allow three-quarters or a cup to each standard coffee measure of coffee. When the wa ter has dripped through, remove the coffee basket and water con tainer. Then and this Is an im portant point stir the hot coffee thoroughly to insure a brew of even strength: Vacuum Coffee: For this type of brew, measure freshly drawn water Into tne lower howl. I'lar It over heat. When all the cof. fee has returned to the lower bowl, remove the upper section and serve. Keep cloth filters In water In the refrigerator between uses never wash them with soap. Percolator coffee should be treated gently: To get consistent ly good results with a percolator, first measure cold water accu rately into the pot and place It on heat. When the water bolls, remove It from the heat and then measure the proper amount of coffee Into the basket. Cover, re turn to heat and allow It to per colate gently for six to eight min utes. That's all there is to it. Remember, coffee should nev er be boiled. It may be kept hot by placing the coffee-maker on an asbpstos mat over low heat. Together these oil areas are greater than any in the United States or elsewhere, he said. They held promise of tremendous oil developments in Canada In years to come. Smith suggested consideration of a plan of shipping oil Into the U. S. midwest from Alberta in exchange for oil being shipped Into eastern Canada from the eastern U. S. This, he said, would go part way to solving Canada's dollar problem. "The department of social se curity is unable to continue mak ing full payments because to do so would mean we would run out of money before the legisla ture meets again to appropriate new funds."
