Barbecued Chops
"One of the most wonderful
I meats I fix Is my barbecued
'chops, ribs, or beef," she says.
"Everyone who tastes them asks
i for the recipe and here it is."
One and one-half pounds of
meat pork chops, spare ribs or
beef, 1 tablespoon celery seed, 1
tablespoon chili powder, V cup
brown sugar, 1 tablespoon salt, 1
teaspoon paprika, 1 cup tomato
puree, cup vinegar.
, If chops are used, have them
cut thick. If spare ribs are used,
have them cut in individual serv
ings. The meat does not take the
seasoning so well if it is in large
pieces. Make a dry sauce by mix
ing the celery seed, chili powder,
brown sugar, salt and paprika.
Rub most of this on the meat and
let it stand overnight. To the re
maining dry sauce add the tomato
puree and vinegar and baste the
meat with this as it cooks in the
oven.
Chicken Croqeuttes

ery salt, milk, butter, flour, H

cook until thick, stirring constant
ly. Add chicken and almonds. Mix
well and cool. Cut croquettes in 2
