Vegetable Salad. Cut Into smnll
pleres the stalks of celery,' ndd
a small Imttlo of sweet pickles, two
jrrn peppers, one nieillum-slzed
onion, one llilnl of a cupful of ca
pers, two lnrj-'O lettuce hearts, one
cupful of cooked green beans, four
small cooked heels and one small
ciin of anchovies; mix with one lil-hli-spoonful
of vinegar, two labia
spoonfuls of olive oil and one
small bottle of stuffed olives, sliced.
Serve on lettuce.
Shamrock Salad. Cut green pep
pers crosswise, choosing those
which will give the trefoil form,
when sliced. Fill the halves after
retrieving seeds and veins with a
nicely sensoned cream ehccr press
ing the filling In tlnnly. Chill, then
cut Into slices nnd serve with a strip
of green pepper as stein.
Orange 8alad. Hisnove the peel
Ing from oranges nnd le much of
the white skin as possible, then cut
Into very thin slices. Arranging
them In overlapping slices on indi
vidual plates on lettuce. Serve with
a nicely seasoned French dressing.
Prune 8alad. Arrange three or
four stewed prunes, which have
been drained and the stones re
moved. In nests of lettuce; sprinkle
Willi chopped nuts and serve with
any desired dressing. The prunes
may lie stuffed with nuts, cheese or
a lilt of tender celery.
Tills salad Is especially nice with
duck.
Southern Onion and Apple Salad.
Take a mfld large onion, cut It
Into very thin slices, then Into dice;
mix Willi finely diced, gondiliivorcd
apple; add a good salad dressing
and serve on lettuce. In tiny such
salmi the vegetables should be ul
fine, to be well-seasoned Willi the
dressing. Large chunks of apple, or
of any fruit or vegetable, are never
well uiaiinuted, neither do they look
appetizing.
