Now that the planting season is practically at an end, the next
problem, in addition to the proper care and cultivation, is the best
methods for conservation of the crops. We do not yet realize in
Oreiron that there is an actual world-wide shortage of fruits and
veo-etnliles. vet it is said that thousands of soldiers in Kurope are 1
sick and dyinjr from scurvy and other diseases from lack of just
these things. It has I wen tiie annual experience in this county and
state to allow thousands mid tens of thousands of bushels of fruit
to k to waste literally lie on the ground and rot for lack of
proper care. It w ill be scarcely less than a crime to permit such a
thinif to happen this year. The soldiers in the trenches and the
women and children of Kurope are in srrcat need of every pound
of fruit and vegetables that can be saved and sent to them. We
must jfet dehydrating plants, if possible, to handle these products,
and if that cannot be done the fruit evaporators should be pressed
into service. It is imperative that nothing in these lines be al
lowed to go to waste.
It is also important that housew ives "put up" exlra quanti
ties of these products for home use. It is more than likely that
canned goods will be scarce and high priced the coming year. Can
neries are having difficulty to .secure the necessary cans for such
purposes, even at greatly advanced prices. Canned goods are in
great demand for the soldiers, and dealers in this country may not
be able to secure them during the coming year.
I'y the processes of dehydrating or evaporating, fruits, ber
ries and vegetables may be preserved and prepared for shipment
without the use of cans or jars. Mid much saving will also he made
on freights, liesort to the old-lime, individual family drier is j
urged, provided no better means is available for saving the sea-!
son's crops. These are the lines that are being urged in the state
of Washington by (Jovernor l.yster, the president of the stale:
agricultural college at Pullman, and others in authority, so we
learn from W. C. Harding, who lecently returned here from Walla j
Walla, (lovernov l,ister recently returned from Washington, 1. j
(.'., where he was informed bv the highest authorities of the press
ing need to save every pound of foodstulls of every kind. I
In our own immediate locality we are not in a' position to
manufacture war supplies on a large scale or to build ships. Yet
we can do what is probably even more important - grow foodstulls
and prepare it for use both at home and abroad. Tlfe demand is I
great and the prices high. Ilegin now to prepare so that nothing I
shall go to waste.
