8trswberry Roll Pudding.
Two cupfuls bread flour, two tea
spoonfuls sugnr, two tablcspoonfuls
butter, three tenspoonfuls baking pow
der, ono-balf teaBpoonful salt, about
three-fourths cupful of milk, one box
of strawberries, sugar. Make a baking
powder biscuit mixture of the flour,
salt, sugar, baking powder, butter nnd
milk. Itoll Into an oblong one-quarter
Inch thick and sprinkle thickly with
one-half box of berries quartered. Then
dredge with sugar. Itoll like jelly roll,
cut across in slices one-baif Inch thick,
lay In pan and bake about twenty min
utes In moderate oven. Serve with
strawberry sauce made from remain
der of strawberries.
To make this, crush fruit; boll to
gether one-half cupful Bugar and three
quarters cupful of water five minutes;
add berries and juice and pour on to a
well beaten egg white, whipping con
stantly. Add one teaspoonful of lemon
juice and serve at once.

Cucumber Piokle.
Twelve cucumbers, washed and
scrubbed thoroughly. Slice very thin,
without peeling. Put in a granite
saucepan, with a sennt cupful of salt ,
sprinkled between, layers. Let It re- i
main In a cool place twenty-four I
hourB. Drain off liquid, chop very I
coarse six good slued onions, add to 1
cucumbers. Mix up well. Cover with j
good elder vinegar and eight table- i
spoonfuls of olive oil. Mix In two j
each of yellow nnd white mustard
seeds. Stir all together. Can In jars
with rubbers as yoa would hot fruit
This does not require cooking and will
keep any length of time.
Potatoes With Cheese Sauce.
Put alternate layers of cold boiled
potatoes, diced, and cheese sauce Into !
a baking dish. Cover with buttered !
crumbs nnd bake till well browned.
Sauce. lilend two tablcspoonfuls of ;
flour Into two tnblespoonfuls of butter, j
melted, add slowly one cupful of milk ,
and a little snlt and pepper and one-
half cupful of grated cheese. Cook '
until It thickens and tbe cheese Is
melted.
Rhubarb Marmalade.
Ten cupfuls diced rhubarb, two cup
fuls walnut meats, chopped, one cup
ful raisins, ten cupfuls sugar, four lem
ons. Cut fruit In Inch pieces without
peeling; add one pint water, boll till
soft, add nuts when rhubarb Is nearly
soft, sugar, juice of lemons and grated
rind of two lemons. Cook to con
sistency of orange marmalade and Jar
ss usual.
Broiled Beefs Liver and Baoon.
Scald bacon, drain nnd set in baking
pan In hot oven to cook. 8enld liver,
let stand live minutes In water, then
pull off outer membranes and remove
tough veins. Dip In the bncon fat nnd
broil for flvo to six minutes, accord
ing to thickness, turning from side to
side. Add salt and pepper and serve
at once, garnished with bacon.
Fried Turnips,
reel white turnips, cut them Into
cubes about one half Inch square, let
stand in colli water one-half hour,
then boll In sailed water until tender.
Drain and try In milter until a golden
brown on both sides.
Apple Lmon Pie.
Peel and civile three large npplea or
their equivalent, mill the grated rind
and Juice of one lemon, ono cupful of
sugar nnd one well honten eg. Mix
thoroughly and hake between two
crusts.
