The tomato as a vegetable, has
had a stormy and checkered career.
The first discovery of the illusive
tomato occurs quite some time
back. Its first use was that of a
messenger between an excited and
angry audience and a very bad ac
tor. The tomato was then selected
as an instrument of vengeance
mainly for its pliableness and its
power of separation when coming
in contact with a much harder
substance.
After the tomato had failed in
its mission to convince the bad
actcr cf his unpopularity, it then
became the plaything for would
be song writers and youthful bards
owing to its euphoneousness.
Now, however, owing to the Im
proved condition of civilization the
tomato is coming into its own and
can be ranked as one of our lead
ing delicacies. A tomato relish is
not only tasty but it is also very
appetiring. I class it as one of my
favorites so will explain just how
I do it.

in butter, then put in the tomatoes
with salt and red pepper to taste.
Vrhen the tomatoes are done
enough to mash easily add soda
and then cook a few minutes, stir
it in cracker dust until it thickens.
Then add Cflgs beaten light and
stir tomatoes into them. Return
to fire and cook slowly until thick,
stirring all the time. Allow it to
cool and eat as a relish. If you
follow out the directions carefully
I can assure you that you will be
agreeably surprised at the result
