In accordance with niy "threat" to give you the pans o'i the menu prepared bv myself on this occasion 1 will state ii.ciu briclly as follows: French Clam Soup On learning from the studio cook that she had just received a supply of clams, my hopes as to the success ol tile dinner, at least as iar as my end of it was con cerned, ran high. Trench clam soup is one of my specialties and I lost no time in putting- forth my -" best efforts just hy way of show ing my co-workers at the studio that my ability in the culinary art amounted to more than the knowl edge of how to boil water without burning ihe pot. -le rec;I)C. i used was as follows: Two dozen hard shell clams minced very line. A minced onion friend in an ounce pf butter; added to this a pint of hot water, fine cloves, one allspice and live whole pepper corns. Boiled about fifteen minutes and (trained into a saucepan. To this was added the chopped clams and a pint of clam-juice. It was al lowed to simmer slowlv for about two hours when it was strained. For one dish of salad take the yolks of three hard . bailed ee.'s and mash line, adding salt and mustard to taste. A paste is made by adding a -ca-spoonlul of olive oil or nicl?J butter. Mix thoroughly and dilute gradually with a cupiul of vine gar. Pour over lettuce leaves and garnish hy laying on slices of an other egg. .My only hateful duty in connec tion with the dinner, which, ol course, was more or less of an im promptu affair, was the purchas ing of a custard pie to go with the collec. To be compelled to pur chase a pic and nariicularlv a custard pie made me feel that 1 was not treating our guests prop erly. However, inasmuch as the other courses at this studio din ner were well liked. 1 felt that the purchased pie could be forgiven.
