"What is your recipo for baking beansP' The question was asked of several individ uals of extended exjerience. Landlord Allen, of tho Hotel Hamilton, who sat over against tho big and finely tainted screen that adorns his dining room, and bears' an excellent likeness of that lover of good things, Louis Leib, in tho makeup ol Falstaff, had no decided opinion as to baking beans, bnt his former business partner, who was with him, said: "I wouldn't bake them. I would fry them. Boil them three or four hours, then drain them, put them in a spidei with salt pork, and fry them to a rich brown." John Snelling, tho warm personal friend ol Senator Mahono, said: "Down south the; havo a liablt of cooking tho beans according to tho approved method and then mashing tbem. I am fond of beans, but I did not learn how to bako them until I camo here. I soak thorn until they become soft, put them in an earthen jar with a little pork, season with inkier nud salt, turn a little molasses on tlio top of them, put tho jar in tho oven and let tho beans bake. I always cook them myself, and I imagine I know how to do it well " "I have not yet becomo thorouchlv ac quainted with tho baked bean," said Bill Nye. "Up in Laramie, wherol held office, baked beans wero unobtainable at any price. The altitude of Laramie, liko tho prices that rule there, is very high, nnd it was found impos sible to boll beans there with any degree ol success, let nlono baking them. The only way they could bo cooked was to put a little saleratus in the water in which thoywere boiling, but under tho best conditions tho boons aio liable to bo about as hard nnd un jKilatablo as marbles." Thoy liavo a tradition in Germany that beans can only bo projicrly cooked when BORkod in clear spring water. Tho host of Helm's rostaurnnt on Twenty -soventh street, whoso recipo did not materially differ from that of tho other epicures, was very particu lar as to tho manner that thoy should be sooked nnd prepared before baking. Ho soaks them nbout four hours and then bakes them in a dripping pan with a littlo piece of scored pork. Mr. Hill, tho theatrical manager, w ho U n typical Yankee and an adept at baking beans, boliovc that thoy should bo soaked or jwrboiled, drained nnd then put in a sheet iron box. A holo in tho ground should bo hollowed out und a ilro built in it. When the burning has gono on long enough to make tho desired degree of heat reniovotho brands, jnit lu tho box of bcius with u piece of pork on top of It, cover up tho box and let tho con tents gradually but surely reach tho desired dsgreo of perfection.
